One of the best things about fall has to be pumpkins. These versatile gourds don't just look good sitting on your porch during the season -- they can be used to whip up some delicious dishes. Pumpkin is a wonderful way to add more vitamin A and vitamin C to your daily diet to support tissue health as well as your immune system.

Pumpkin Muffins

Ingredients:
  • 1/4 cup almond flour
  • 1 tsp baking soda
  • 1 tsp pumpkin pie spice
  • 1 cup xylitol
  • 1/2 cup canola oil
  • Liquid egg replacement (equals 2 large eggs)
  • 1/2 can pumpkin puree
  • 1/2 cup unsweetened applesauce

  • Directions
    Preheat oven to 375 degrees Fahrenheit. Combine all dry ingredients except xylitol in a large bowl. Combine all wet ingredients plus xylitol in a small mixing bowl. Add wet ingredients to the dry ingredients and mix until just combined. Pour dough into lined muffin tins. Bake for 20 to 25 minutes. Let cool and enjoy right away or freeze to keep fresh all season.


    Pumpkin No-Bake Cookies

    Ingredients:
  • 1/3 cup canned pumpkin puree
  • 1/2 pecans, chopped
  • 1/4 cup raw honey
  • 1/2 tsp vanilla extract
  • 1/4 tsp baking soda
  • 1/4 tsp sea salt
  • 2 tbsp almond milk

  • Directions
    Combine wet and dry ingredients in separate bowls. Add wet ingredients to the dry ingredients and combine with your hands. Roll dough into balls and store in the refrigerator in an air-tight container. Enjoy after an hour or so when they're a little firmer!

    Pumpkin Protein Pancakes

    Ingredients:
  • 1/3 cup vanilla protein powder
  • 1/3 cup all purpose flour
  • 2 1/4 tsp baking powder
  • 2 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • 1/4 cup light agave syrup
  • 1/2 cup canned pumpkin puree

  • Directions
    Heat your skillet over medium heat. Combine wet and dry ingredients in separate bowls. Add the wet ingredients to the dry ingredients and mix until just combined. Pour batter and brown in skillet. Makes 8 to 10 pancakes. Top with butter or coconut oil and dust with powdered sugar.

    Pumpkin Spice Shake

    Ingredients:
  • 1 scoop vanilla meal replacement powder
  • 1 cup unsweetened almond milk
  • 1/2 cup canned pumpkin puree
  • 1/4 to 1/2 tsp pumpkin pie spice
  • 1 cup ice

  • Directions
    Combine all ingredients in a blender and blend until smooth. Enjoy as a nutritious breakfast or lunch. 

    Pumpkin Overnight Oatmeal

    Ingredients:
  • 1/4 cup canned pumpkin puree
  • 1 tsp pumpkin pie spice
  • 1/2 cup unsweetened or vanilla almond milk

  • Directions
    Combine all ingredients in a bowl. Once mixed, pour into an air-tight container and store in the refrigerator overnight.
