Sea vegetables are harvested by hand before being boiled and allowed to freeze and thaw repeatedly to make Agar Agar Sea Vegetable Flakes. Unlike commercially made agar agar, there is no sulfuric acid used to soften the sea vegetables nor inorganic bleaches and dyes. Agar agar is also called "kanten" in Japan, and can be used in any recipe calling for gelatin.
