Ingredients:1 tsp baking soda1 tsp pumpkin pie spiceLiquid egg replacement (equals 2 large eggs)1/2 can pumpkin puree1/2 cup unsweetened applesauce
Preheat oven to 375 degrees Fahrenheit. Combine all dry ingredients except xylitol in a large bowl. Combine all wet ingredients plus xylitol in a small mixing bowl. Add wet ingredients to the dry ingredients and mix until just combined. Pour dough into lined muffin tins. Bake for 20 to 25 minutes. Let cool and enjoy right away or freeze to keep fresh all season.
Pumpkin No-Bake Cookies
Ingredients:1/3 cup canned pumpkin puree1/2 pecans, chopped1/2 tsp vanilla extract1/4 tsp baking soda2 tbsp almond milk
Combine wet and dry ingredients in separate bowls. Add wet ingredients to the dry ingredients and combine with your hands. Roll dough into balls and store in the refrigerator in an air-tight container. Enjoy after an hour or so when they're a little firmer!
Pumpkin Protein Pancakes
Ingredients:1/3 cup all purpose flour2 1/4 tsp baking powder2 tsp pumpkin pie spice1 tsp vanilla extract1/2 cup canned pumpkin puree
Heat your skillet over medium heat. Combine wet and dry ingredients in separate bowls. Add the wet ingredients to the dry ingredients and mix until just combined. Pour batter and brown in skillet. Makes 8 to 10 pancakes. Top with butter or coconut oil and dust with powdered sugar.
Pumpkin Spice Shake
Ingredients:1 cup unsweetened almond milk1/2 cup canned pumpkin puree1/4 to 1/2 tsp pumpkin pie spice1 cup ice
Combine all ingredients in a blender and blend until smooth. Enjoy as a nutritious breakfast or lunch.
Pumpkin Overnight Oatmeal
Ingredients:1/4 cup canned pumpkin puree1 tsp pumpkin pie spice1/2 cup unsweetened or vanilla almond milk
Combine all ingredients in a bowl. Once mixed, pour into an air-tight container and store in the refrigerator overnight.
